Ingredients:

  • 1 1/2 cups almond flour

  • 1/2 cup coconut flour

  • 1/4 cup psyllium husk powder

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 4 large eggs

  • 1/4 cup melted butter or coconut oil

  • 1/4 cup sour cream or Greek yogurt (full-fat)

  • 1 tablespoon apple cider vinegar

  • 1/4 cup warm water

  • Sesame seeds or poppy seeds for topping (optional)

Instructions:

  1. Preheat and Prepare:

    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix Dry Ingredients:

    • In a large bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

  3. Combine Wet Ingredients:

    • In another bowl, beat the eggs. Add melted butter or coconut oil, sour cream or Greek yogurt, apple cider vinegar, and warm water. Mix until well combined.

  4. Combine and Knead:

    • Pour the wet ingredients into the dry ingredients and stir until a dough forms. Use your hands to knead the dough gently until it holds together and is smooth.

  5. Shape the Baguettes:

    • Divide the dough into 3 equal portions. Roll each portion into a ball and then shape into a long baguette shape, about 10 inches long. Place them on the prepared baking sheet.

  6. Score and Top (Optional):

    • Using a sharp knife, make diagonal slashes along the top of each baguette. Brush with a little water and sprinkle sesame seeds or poppy seeds on top if desired.

  7. Bake:

    • Bake in the preheated oven for 25-30 minutes, or until the baguettes are golden brown and sound hollow when tapped on the bottom.

  8. Cool and Serve:

    • Remove from the oven and let cool on a wire rack before slicing. Enjoy your keto baguettes warm or at room temperature.

Notes:

  • These keto baguettes are perfect for sandwiches, dipping in olive oil, or serving alongside soups and salads.

  • Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
